Dessert with carrots? Yeap, you read it right! This is Carrot Souffle!
I honestly did not think this would be delicious at all, but while going through the recipe and how the author talks about the taste of this dish, and how easy it is to make, I was getting more curious! I had the ingredients at home, so why not?! I did some tweaks to the recipe ( instead of baby carrots I used normal carrots, and instead of 1 – 1/2 cups of sugar which seemed to much sweetness for me, I reduced it to 1 Cup of sugar) so here it goes!
- 2 cups carrots
- 1/4 cup water
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp vanilla
- 1/3 cup all purpose flour
- 4 eggs
- 1/2 cup melted butter
- sprinkle of confectioners sugar
Cook carrots in boiling water until soft.
Drain and add the cooked carrots to the food processor.
Add 1 cup of granulated sugar
Add 1 1/2 tsp baking powder
1 1/2 tsp vanilla
1/3 cup all purpose flour
1/2 cup melted butter (8 Tbsp) and Mix!
Grease your casserole or baking pan dish with butter ( I used Blue Bonnet Butter)
The batter should come only about halfway up the sides of the dish
Bake uncovered at 350 degrees F for about 20 mins.
Sprinkle confectioners sugar on top! (optional)
I think this lasted like.. half day at home. It’s so darned good!
